Chili Beef Over Capellini ... a to die for recipe from Our Lady of Weight Loss, Janice Taylor and the Tushkateers.

CHILI BEEF Over Capellini from KITT Club member, Tushkateer in good standing, Denise B.

Crockpot cookery!! Place all of the ingredients in to cook all day.

2 pounds lean stew meat, trimmed. (Note from OLofWL: please buy organic meat.)
One entire onion, sweet Vidalia my favorite, large chunks One jalapeno chile, medium size, seeded.
Water to cover beef
One 10 oz can tomato sauce
Cumin, 2 teaspoons
Garlic Salt, 1 tablespoon

Cook at 250-300 F. for six to eight hours.
When opening stir and shred beef cubes after turning off the crockpot.
Pour approximately 2 cups f the liquid and beef into a pan and cook down until meat-sauce mixture is thickened.
Meanwhile cook one small package capellini (4 servings).
Serve over cooked capellini.
We had one cup each of the sauce and beef mixture over a small amount of pasta.
Serves four with leftover beef.
No need to salt or add cheese or make it more fattening-it is decadent and rich.

Thanks to Denise B. for a one pot recipe!

Easy, too! And again … go see Food Inc. and eat organic.
